Minted Pineapple Relish

1 Package (3oz) Jell-O Lime Gelatin
Dash of salt
3/4 cup boiling water
1 can (13 1/2 oz.) crushed pineapple
4 drops mint or peppermint extract
2 1/2 teaspoons vinegar

Dissolve gelatin and salt in boiling water.  Stir in remaining ingredients.  Chill until thickened.  Pour into 3- or 4-cup mold or individual molds.  Chill until firm-about 4 hours.  Unmold.  Makes about 2 1/2 cups or 6 to 8 servings.

Note:  Mixture may be chilled in a serving bowl; do no unmold.
