4 boneless, skinless chicken Breast
1 Packet, low sodium taco seasoning
4 Low carb, light or whole wheat tortillas
1 Cup grated lite mozzarella
4 Cups chopped lettuce
1 diced tomato
1/4 cup chopped green onions
1 large avocado diced
1 15 oz. can low sodium black beans
Preheat oven to 350 degrees, place chicken breasts in pan and sprinkle with
taco seasoning packet and bake for 40 mins. When done, chop or shred
into bite size pieces.
While chicken is baking, prepare ingredients
individually for later assembly.
Heat black beans and grated cheese together,
then spread on the tortilla. Sprinkle chicken pieces over the beans
and cheese. Bake in over for 15 mins.
Serve on plate, with prepared toppings, and
low fat sour cream, or thousand island dressing.
