Irish Stew

Ingredients:
 

1 1/2 pounds lamb or beef, cubed
1/3 cup of flour
1 oz fresh thyme
1 bay leaf
2 Tbl. Olive Oil

4 medium carrots
3 Large potatoes
1 onion, peeled
1/2 small can of stewed tomatoes

1 cup beef stock
1/2 cup water
1 Cup red wine

salt and pepper to taste

Directions:

Mix thyme, crushed bay leaf, salt and pepper with flour, coat cubed beef or lamb with seasoned flour mix,  brown in oil in a large pot. Add sliced vegetables and thyme. Add the beef stock and water. Add bay leaf for taste.

Simmer for 2 to 3 hours until meat and veggies are tender. You can add more water if necessary.
