Irish Stew

Ingredients: 1 1/2 pounds lamb
or beef, cubed 4 medium carrots salt and pepper to taste Directions: Mix thyme, crushed bay leaf, salt and pepper with flour, coat cubed beef or lamb with seasoned flour mix, brown in oil in a large pot. Add sliced vegetables and thyme. Add the beef stock and water. Add bay leaf for taste. Simmer for 2 to 3 hours until meat and veggies are tender. You can add more water if necessary.
