Fruits that float: fresh fruits such as apples, bananas, orange and grapefruit sections, sliced peaches and pears, strawberries, and fruit packed in light syrup.

Quick Cranberry-Apple Mold

1 package (3 oz.) Jell-O Raspberry or Strawberry Gelatin
1/3 cup sugar
1/8 teaspoon salt
1/8 teaspoon cinnamon
Dash of ground cloves
3/4 cup boiling water
1 cup crushed ice
1 medium apple, peeled, cored and cut into wedges
1 cup fresh cranberries

Combine gelatin, sugar, spices and boiling water in an electric blender container.  Cover; blend at low speed  until gelatin is dissolved - about 30 seconds.  Add crushed ice and blend at high speed until ice is melted - about 30 seconds.  Measure out 3 cups of gelatin mixture and chill until thickened.  Add apple wedges and cranberries to the remaining gelatin in blender and blend at low speed until fruit is broken into pieces; stir into thickened gelatin.  Pour mixture into a 4 -cp mold or individual molds and chill until firm - about 1 hour.  Unmold.

Makes 4 cups or 8 servings.
