Low Calorie Artichoke Spinach Dip

1 box frozen chopped
spinach, thawed Preheat oven to 350 degrees F. Drain and squeeze as much liquid as possible from spinach. In blender, add all ingredients except artichokes. Blend until just blended but still slightly lumpy. Add artichokes and blend in pulses to form a chunky consistency. Place in a 1-quart baking dish. Top with remaining mozzarella. Bake until bubbly, about 30 minutes.
