Potato Flat Bread  

 

Part of a traditional Irish breakfast

1 Cup warm cooked potato
1/2 tsp salt
2 Tbl. melted butter
1/4 Cup plain flour
Makes 8

Cook and mash potatoes well. Add salt and butter, then mix in flour to make a  dough. Divide the dough in two and roll out on a floured surface to form two circles about a 1/4 inch thick. Cut each circle into quarters and bake on a hot griddle or pan for about 5 minutes or until browned on both sides. You can either lightly grease the pan or lightly dust with flour for a drier bread.

Substitution: finely milled oatmeal for the flour in the recipe above.
