Stuffed Red Peppers
Low in fat, low in calories and low in carbs, and it's really good too!



 

4 Large Red Peppers, sliced in half & cleaned
1 lb. ground turkey breast
1 tbl. chili powder
1/4 C. chopped green onion
1/4 C. chopped red onion
1 tsp. curry powder
1 tsp. garlic powder
1/4 C. chopped blend of yellow, green and red peppers
1/4 C. grated cheddar cheese
1 C. water
1 C. tomatoes sauce, or chopped seasoned tomatoes.

Preheat oven to 350 degrees. Pour water into deep pan, ( I use my grandmother's cast iron Dutch oven) and place baking rack in pan. 

In a large bowl, blend ingredients together thoroughly.  Fill red pepper halves with ground turkey breast mixture and set on rack in pan.

Cover and cook for 40 minutes.  Uncover and pour tomatoes over the peppers, cook additional 15 minutes.
